Research focus is on developing new methods for protein isolation and fractionation. My work also focuses on determining the structural and functional properties of isolated proteins with a view to identifying potential uses as food ingredients. Finally, I specialize in converting food proteins into bioactive peptides through customized enzyme digestion and fractionation.
